TACO RANCH QUICHE


Ingredients:
  • 1/2 lb ground beef
  • 1 (10-oz) can diced tomatoes and green chiles, undrained
  • 2 Tbsp taco seasoning
  • 1/3 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 3 eggs
  • 1 cup heavy cream
  • 1 (9-inch) deep dish frozen pie crust

How To Make It:
  1. Preheat oven to 350ºF.
  2. In a skillet, cook ground beef until no longer pink. 
  3. Drain fat. 
  4. Add undrained diced tomatoes and green chiles and taco seasoning. 
  5. Cook an additional 2 to 3 minutes, until liquid is absorbed. 
  6. Remove from heat and cool slightly. 
  7. Stir in ranch dressing.
  8. Spoon ground beef mixture into the bottom of pie crust. 
  9. Top with shredded cheddar cheese.
  10. Whisk together eggs and heavy cream. 
  11. Pour over meat and cheese mixture in crust.
  12. Bake 1 hour. 
  13. Allow quiche to rest 5 to 10 minutes before serving.

Notes:
  • Can use ground turkey in place of ground beef.
  • Can freeze quiche unbaked. Prepare though step 11. Cover with foil and freeze. To bake from frozen, thaw completely and bake as directed above.
  • Top quiche with your favorite taco toppings - lettuce, tomatoes, sour cream, salsa, guacamole.
