- 1/2 lb ground beef
- 1 (10-oz) can diced tomatoes and green chiles, undrained
- 2 Tbsp taco seasoning
- 1/3 cup ranch dressing
- 1/2 cup shredded cheddar cheese
- 3 eggs
- 1 cup heavy cream
- 1 (9-inch) deep dish frozen pie crust
How To Make It:
- Preheat oven to 350ºF.
- In a skillet, cook ground beef until no longer pink.
- Drain fat.
- Add undrained diced tomatoes and green chiles and taco seasoning.
- Cook an additional 2 to 3 minutes, until liquid is absorbed.
- Remove from heat and cool slightly.
- Stir in ranch dressing.
- Spoon ground beef mixture into the bottom of pie crust.
- Top with shredded cheddar cheese.
- Whisk together eggs and heavy cream.
- Pour over meat and cheese mixture in crust.
- Bake 1 hour.
- Allow quiche to rest 5 to 10 minutes before serving.
Notes:
- Can use ground turkey in place of ground beef.
- Can freeze quiche unbaked. Prepare though step 11. Cover with foil and freeze. To bake from frozen, thaw completely and bake as directed above.
- Top quiche with your favorite taco toppings - lettuce, tomatoes, sour cream, salsa, guacamole.
