EZELL'S FISH CAMP COLESLAW


Ingredients:

  • 2 Large Heads Cabbage, chopped (I buy 2 16oz bags)
  • 2 Cups Duke's Mayonnaise
  • 2 Cups Sweet Pickle Relish
  • 1/2 Cup Sugar
  • 1/2 Cup Ground Yellow onions


How to Make It:

  1. Combine all ingredients using more or less mayonnaise to your preferred consistency.


*Use no Salt or Pepper when mixing the slaw, it makes the cabbage weep.
**Slaw is always better the second day after tastes marry.
***Will last a few days if refrigerated.

  2. Pretty close approximation of the best coleslaw ever.
    Tip, make a day ahead of time as it needs a night in the fridge to come together. Initially the onion will blast you and be bitter, grating onion makes it bitter.
    But let it sit a night to come together the onion fades and the sugar and sweet relish come forward. The cabbage also softens a bit and releases it's juices due to the sugar making it creamier rather than crunchy.
    Matter of fact do not try to adjust anything to taste until it has sat.
