ROTEL MEXICAN CHICKEN CASSEROLE


Ingredients:

  • 1 Can Rotel Tomatoes
  • 1 10 1/2 oz. Can Cream of Chicken Soup
  • 1 Small Can Green Chillies, Chopped
  • 1 lb. Velveeta Cheese, Cubed
  • 3 Chicken Breast halves, Cubed (I use a rotisserie Chicken)
  • 8 oz Bag Mexican Cheese Blend
  • 1 Bag Doritos, Crushed


How to Make It:

  1. Preheat oven to 350 degrees.
  2. Mix together tomatoes, soup, green chillies, and cubed cheese.
  3. Heat in microwave until melted.
  4. Add Chicken.
  5. Ina  backing dish, layer 1/2 crushed chips and 1/2 chicken mixture.
  6. Repeat layers.
  7. Top with Mexican cheese blend and a few crushed chips.
  8. Bake until hot and bubbly.
