LAYERED CORNBREAD


Ingredients:
  • 1 1/4 cups Yellow Cornmeal
  • 2 Eggs, well beaten
  • 1 cup Milk
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 1 can Cream Style Yellow Corn
  • 1/4 cup Bacon Drippings (or oil)
  • 1 pound Ground Beef
  • 1 large Onion
  • 16 ounces Sharp Cheddar Cheese
  • 1 small can of Pickled Jalapenos (optional)

How to Make It:
  1. Combine first 7 ingredients in a large mixing bowl and set aside.
  2. Grate your cheese and chop your jalapenos (optional) and onion and set aside.
  3. Cook ground beef in a skillet until done and drain.
  4. Grease a large cast iron skillet and heat. 
  5. Sprinkle a very thin layer of cornmeal in skillet and let brown slightly.
  6. Pour 1/2 batter in the skillet.
  7. Sprinkle cheese over the top of the batter.
  8. Sprinkle ground beef over the top of the cheese.
  9. Sprinkle chopped onion and jalapenos (optional) over the top of the beef.
  10. Pour remaining batter on top.
  11. Bake in a 350 degree oven for 45 to 60 minutes.
