ONE POT TACO CASSEROLE


Ingredients:
  • 1 lb Lean Ground Beef
  • 1 Package McCormick Taco Seasoning (low sodium)
  • 2 Cups Water
  • 1 (15oz) Can Diced Tomatoes (low sodium)
  • 1 (15 oz) Can Tomato Sauce (low sodium)
  • 1 Cup Frozen Whole Kernel Corn
  • 2 Cups Uncooked Elbow Macaroni
  • 1 Cup Shredded Colby/Jack Cheese

How to Make It:
  1. Brown beef in 3 quart pot over medium/high heat. 
  2. Drain fat and return beef to pot.
  3. Add taco seasoning, water, tomatoes, tomato sauce and corn. 
  4. Bring to a boil.
  5. Add uncooked macaroni and reduce heat to low. 
  6. Cover and simmer for 10-15 minutes (until pasta is cooked through). 
  7. Stir occasionally.
  8. Remove from heat. 
  9. Sprinkle cheese on top and cover.
  10. Serve once cheese is melted.
