BUTTERMILK MEAT LOAF


Ingredients:
  • 1 cup soft bread crumbs
  • 2 eggs, lightly beaten
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped bell pepper (optional for added flavor)
  • 6 tablespoons ketchup, divided
  • 1/4 cup Brown Sugar
  • 1/4 cup buttermilk
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1-1/2 pounds ground beef
How to Make It:
  1. In a large bowl, combine the bread crumbs, eggs, bell pepper (optional), onion, 4 tablespoons ketchup, buttermilk, parsley, garlic salt and pepper. 
  2. Crumble beef over mixture and mix well. 
  3. Shape into a loaf. Place in a greased 11-in. x 7-in. baking dish.
  4. Bake, uncovered, at 350° for 50 minutes. 
  5. Spread with remaining barbecue sauce. 
  6. Bake 10 minutes longer or until meat is no longer pink and a meat thermometer reads 160°. 
  7. Drain; let stand for 10 minutes before slicing. 
Yield: 6 servings.
