Ingredients:
- 1 1/4 cup self-rising flour
- 1 1/4 cup self-rising white cornmeal
- 1 tablespoon sugar
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon freshly ground pepper
- 1 cup buttermilk
- 1/2 cup whole kernel corn
- 1 large egg, lightly beaten
- 2 1/2 cups finely chopped onion
- 1 plum tomato, finely chopped
- vegetable oil
How to Make It:
- Combine first 6 ingredients in a large bowl; stir well.
- Combine buttermilk,corn, and egg; add to dry ingredients, stirring just until moistened.
- Stir in onion and tomato.
- Pour oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees.
- Drop batter by rounded teaspoonfuls, in batches, into hot oil.
- Fry 2 minutes or until golden, turning once.
- Drain on a wire rack over paper towels.
***Diner secret- Keep a can of beer handy. Stir in a little if the hush puppy batter is stiff.
