HUSH PUPPIES


Ingredients:
  • 1 1/4 cup self-rising flour
  • 1 1/4 cup self-rising white cornmeal
  • 1 tablespoon sugar
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground pepper
  • 1 cup buttermilk
  • 1/2 cup whole kernel corn
  • 1 large egg, lightly beaten
  • 2 1/2 cups finely chopped onion
  • 1 plum tomato, finely chopped
  • vegetable oil

How to Make It:
  1. Combine first 6 ingredients in a large bowl; stir well. 
  2. Combine buttermilk,corn, and egg; add to dry ingredients, stirring just until moistened. 
  3. Stir in onion and tomato.
  4. Pour oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. 
  5. Drop batter by rounded teaspoonfuls, in batches, into hot oil. 
  6. Fry 2 minutes or until golden, turning once. 
  7. Drain on a wire rack over paper towels.
***Diner secret- Keep a can of beer handy. Stir in a little if the hush puppy batter is stiff.
