BAKED POTATO SALAD


Ingredients:
  • 8 Medium Red Russet Potatoes
  • 1 Cup Sour Cream
  • 1/2 Cup Mayonaise
  • 1 Pkg Bacon, cooked and crumbled
  • 1 Small onion, Chopped
  • Chives, to taste
  • 1 1/2 Cup Shredded Cheddar Cheese
  • Salt and Pepper, to taste (approx. 1/2 tsp. Salt & 1/4 tsp. Pepper)

How to Make It:
  1. Wash and Cut Potatoes into bite sized pieces
  2. Cover with water and boil until fork tender, about 20 to 25 minutes
  3. Drain and Cool the potatoes
  4. Once cool, mix mayo and sour cream
  5. Add onions, chives and cheese
  6. Add Salt and Pepper, to taste
  7. Top with Extra cheese and Bacon
