- 8 Medium Red Russet Potatoes
- 1 Cup Sour Cream
- 1/2 Cup Mayonaise
- 1 Pkg Bacon, cooked and crumbled
- 1 Small onion, Chopped
- Chives, to taste
- 1 1/2 Cup Shredded Cheddar Cheese
- Salt and Pepper, to taste (approx. 1/2 tsp. Salt & 1/4 tsp. Pepper)
How to Make It:
- Wash and Cut Potatoes into bite sized pieces
- Cover with water and boil until fork tender, about 20 to 25 minutes
- Drain and Cool the potatoes
- Once cool, mix mayo and sour cream
- Add onions, chives and cheese
- Add Salt and Pepper, to taste
- Top with Extra cheese and Bacon
