THANKSGIVING IN THE SOUTH

DEEP-FRIED TURKEY

Ingredients:

  • Turkey (no more than 20 pounds)
  • Dry Rub (your favorite kind)
  • 3 to 5 gallons Peanut Oil
  • Turkey Fryer

How to Make It:

  1. Thaw Turkey to room temperature.
  2. Wash bird inside and out, and allow to drain.
  3. Coat turkey with dry rub.
  4. Heat peanut oil in a turkey fryer to 350 degrees F.
  5. Place turkey on the frying rack.
  6. Using hook, lower turkey into hot oil, very carefully, making sure it is fully submerged.
  7. Fry turkey for 3 minutes per pound plus 5 minutes per bird.
  8. Remove turkey from oil and drain on paper towels.
*Use Cooking mitts to protect yourself from hot oil splashing hands


CHICKEN AND DRESSING

Ingredients:
  • 2 boxes Jiffy Corn Muffin Mix (8.5oz each), or 2 Pans of Cornbread
  • Swanson Chicken Broth (approx. 40oz)
  • Bread, approximately 3-6 slices
  • 4 Eggs
  • 1 Small Chicken
  • 3 Stalks of Celery
  • 1 Onion
  • 1/2 tsp Sage (optional)
  • 1 Tbsp. Poultry Seasoning
  • 1 tsp Salt, adjusted to taste
  • 1 tsp Pepper, adjusted to taste

How to Make It:
  1. Bake cornbread according to recipe on box 
  2. Chop celery and onion
  3. Sautee in saucepan until soft.
  4. Cook 1 chicken in water, debone and chop or any other chicken piece you have.
  5. Crumble up entire cornbread into large pan. 
  6. Add 3 to 6 slices bread (any bread) to the mix.  
  7. Press down with a large spoon to break it all up into smaller crumbles.
  8. Add sauteed onion and celery back to the pan.
  9. Begin adding broth, approx. 4 cups. You’ll want the bread all covered and very moist. Soupy texture.
  10. Add Eggs
  11. Add salt, pepper, poultry seasoning and sage (optional)
  12. Mix well. 
  13. Pour into large baking pan
  14. Bake at 350 degrees for 45 minutes or until done.
  15. Don't forget the Jellied Cranberry Sauce!


GIBLET GRAVY

How to Make It:
  • Cook giblets until done. Set aside. 
  • Lightly brown 1 tablespoon flour. 
  • Add 2 boiled chopped eggs, 
  • 1 can of chicken broth or cream of chicken soup. 
  • Add giblets and cook on low heat for 15 minutes. 
  • Serve over dressing

GREEN BEAN CASSEROLE

Ingredients:
  • 2 Cans cut green beans
  • 2 tablespoons butter
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 2 cups shredded Cheddar cheese
  • 1 cup sour cream
  • 1 container French Fried Onions
  • Salt & Pepper (to taste)

How to Make it:
  1. Mix Green Beans, Mushroom Soup, Cheddar Cheese (save some to sprinkle on top), Sour Cream and Salt and Pepper.
  2. Pour into a casserole dish
  3. Sprinkle cheese on top
  4. Pour 1/2 of the French Fried Onions on top
  5. Melt butter and pour over onions
  6. Cook in preheated 350 degree oven for 30 minutes or until bubbly
  7. Take out of oven, sprinkle remaining fried onions on top, continue baking for 5 minutes or until golden brown.

SWEET POTATO SOUFFLE

Ingredients:

For the sweet potatoes
  • 3 cups (2 29-ounce can) sweet potatoes, drained
  • ½ cup melted butter
  • ⅓ cup milk
  • ¾ cup sugar
  • 1 teaspoon vanilla
  • 2 beaten eggs
  • salt to taste
For the topping
  • 5 tablespoons melted butter
  • ⅔ cup brown sugar
  • ⅔ cup flour
  • 1 cup pecan pieces

How to Make It:
  1. Preheat the oven to 350 degrees. 
  2. Mash the sweet potatoes and add the melted butter, milk, sugar, vanilla, beaten eggs, and a pinch of salt. 
  3. Stir until incorporated. 
  4. Pour into a shallow baking dish.
  5. Combine the butter, brown sugar, flour, and pecan pieces in a small bowl, 
  6. Using your fingers to create moist crumbs. 
  7. Sprinkle generously over the casserole. 
  8. Bake for 25-35 minutes, until the edges pull away from the sides of the pan and the top is golden brown. 
  9. Let stand for the mixture to cool and solidify a little bit before serving.

PUMPKIN PIE

Ingredients:
  • 3/4 cup sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 1/4 cups evaporated milk or half and half
  • 2 eggs, beaten
  • 1 Pillsbury™ Pet-Ritz® frozen deep-dish pie crust

How to Make It:
  1. Heat oven to 425°F. 
  2. In large bowl, mix filling ingredients. 
  3. Pour into pie crust.
  4. Bake 15 minutes. 
  5. Reduce oven temperature to 350°F; bake 40 to 50 minutes longer or until knife inserted near center comes out clean. 
  6. Cool 2 hours. 
  7. Serve or refrigerate until serving time. 
  8. Store in refrigerator.

BUTTERMILK PIE

Ingredients:
  • 4 eggs
  • 1 cup sugar
  • 1 tablespoon all-purpose flour
  • 1 cup Buttermilk
  • 1 (9 inch) pie crusts

How to Make It:
  1. Combine all ingredients in a bowl and mix well.
  2. Pour into unbaked pie shell 
  3. Bake at 350 degrees for 45 minutes.
  4. Let this pie cool slightly before you serve.
